NUTRITIONAL EVALUATION OF VIGNA SUBTERRANEA SEED

Abstract
The proximate and mineral composition of Vigna subterranea seeds were analysed using standard analytical procedures. The result showed that the seeds contained 10.170.76% moisture, 3.800.29% ash, 4.170.29% fibre, 5.670.76% lipid, and 21.460.02% protein and 54.730.50 % carbohydrate. The result also showed that the seeds had some macro and trace elements such as sodium 82.336.29mg/100g, potassium 98.801.57mg/100g, magnesium 0.620.03mg/100g, phosphorus 5.280.10mg/100g, calcium 0.130.03 mg/100g and zinc 0.180.01mg/100g, iron 0.440.05mg/100g, lead 0.000.00mg/100g respectively. This is an indication that the seed of Vigna subterranea could be a potential source of nutrient to both man and livestock because of its considerable quantities of some essential food component
